La statue de Jean Jaurès, le grand homme de la région, au centre de Carmaux, dont je n'ai pas pu m'empêcher d'ajouter la photo. Elle est éloignée des cités présentées ici, et Jean Jaurès ne les a jamais connue, car assassiné en 1914. Mais on reste dans cette tradition de mémoire ouvrière qui reste très forte à Carmaux et dans les environs. La statue est l'œuvre du sculpteur Gabriel Pech, elle a été inaugurée en 1923 par Anatole France.

Deymier's factory produce the best échaudés in all local markets of Ségala. The échaudés (scalded biscuits) are dry cakes in the shape of triangle dating from the Middle Ages, the lumps containing flour and grains of anise are poached with ebullient water, then cooked with the very hot furnace.
